Potato Veggie Au Gratin
5 c. (1 1/2 lbs.) cubed red potatoes (or a potato medley for added color!)
2 c. broccoli florets
2 c. baby carrots
1 c. chopped onion
1 c. milk (I prefer heavy cream)
3/4 c. shredded sharp cheddar, divided (or try a smoked cheese!)
1/2 c. fresh basil chiffonade
salt & pepper (to taste)
cooking spray (butter or margarine will work to grease the pan)
Steam potatoes, covered (20 min.) til tender, drain, slightly mash.
preheat oven 375 degrees.
Steam broccoli, carrot, onion (10 min.) til tender, drain.
Combine potatoes, veggies, milk, 1/2 c. cheese, basil, S & P; spoon into greased baking dish,
top with remaining cheese; bake 20 min.
***You may also want to add to cheese topping 1/2 c. Italian bread crumbs for a nice crust...
