San Antonio Style Hot Sauce

INGREDIENTS:

6 or 7 medium-size ripe red tomatoes
5 or 6 serrano peppers
some cilantro
some onion
1/2 to 1 tsp salt

Blanch and peel the tomatoes, and remove all of the seeds and seed goo, then cut into approx 1" cubes. Remove all seeds from the serrano peppers and slice into very small pieces or slivers. Wash cilantro and remove enough leaves to get about a half-cup of leaves. Slice enough onion to make about a quarter cup.

Put one or two of the tomatoes-worth of tomato into a blender with the serrano pepper pieces and blend well. Add onion, cilantro, salt, and the rest of the tomato to fill to top of blender. Blend just enough to mix everything together into a froth, but no longer.

Note: Most retail corn tortilla chips are way too thick and way too salty. Only use "El Milagro" brand corn tortilla chips. For an added treat, heat some "Jamie's Spanish Village" brand chili con queso in the microwave.
