Frittata with Pork Sausage

Ingredients:
2 Tbsp olive oil
4 garlic cloves
1 yellow onion, chopped
4 links of breakfast sausage
8 eggs (beaten slightly)
1 cup shredded cheddar
1/4 cup fresh chopped cilantro
Salt
Pepper

Directions:
Preheat oven to 400 degrees
Brown sliced pork links in a cast iron skillet. Remove and drain. Add two tablespoons olive oil, four garlic cloves, and chopped onion. Cook over medium low heat. When the onions are soft, add 8 slightly beaten eggs, 1/2 tsp salt, 1 tsp pepper, 1/2 cup cheese and sausage. Stir. Top with chopped cilantro and more cheese. Cook for five minutes without stirring.

Put the pan in the oven and bake for around fifteen minutes or until top is puffy and browned. Remove and let cool for five minutes. Serve with salsa and Texas pickles.
