Honey Garlic Chicken Thighs
1 lb. boneless chicken thighs
1/4 c. honey
2 tbsp. tamari (or soy sauce)
1 tbsp. red wine vinegar
1 tbsp. mustard
Chili flakes (to taste, I used almost a full tbsp. but keep in mind, I eyeball that amount)
Garlic (minced) of which I probably used 6 cloves
1 medium shallot....
Brown the chicken thighs in cast iron skillet (about 5 minutes per side), removed from pan....have the sauce all mixed and ready....remove chicken from pan, add a tab of butter to deglaze pan, then add 1 tbsp. flour and stir about 1 minute....add the sauce and stir (turn off stove at this point)....stir and allow to thicken, add the chicken back to the pan and tossed to coat (or spoon over!)....place in oven at 425° for about 15-20 minutes and serve with your favorite sides.
