Cafe Annie Guacamole
2 large avocados halved, pitted, and peeled
1 small red onion, finely chopped
3/4 cup fresh cilantro
1/2 red bell pepper, finely chopped
2 tablespoons fresh lime juice
2 tablespoons olive oil
1 jalapeno chili pepper -- minced with seeds
Salt and freshly ground pepper
Tortilla chips
Coarsely mash first 7 ingredients in medium bowl, using back of spoon. Season with salt and
pepper. (Can be prepared 3 hours ahead. Press plastic wrap onto surface of guacamole and
refrigerate.) Serve with tortilla chips.
