Cuppachuk Brownies
Ingredients:
Brownies:
1/2 cup unsalted butter
2 ounces unsweetened chocolate
1 cup sugar
1/2 teaspoon vanilla extract
2 large eggs
1/2 cup sifted all-purpose flour
Pinch of salt
1/2 cup coarsely chopped pecans (optional)
Icing:
2 Tbsp. butter, room temperature
1/2 teaspoon vanilla
1 cup sifted confectioners sugar (powdered sugar)
1 egg
2 ounces unsweetened chocolate, melted
Directions:
Line an 8-inch square pan with foil; lightly butter bottom and sides. Melt butter and chocolate
over low heat. Cool 2 minutes. Stir in sugar and vanilla. Add eggs, one at a time, stirring until
smooth. Add flour, and salt, nuts (if using). Stir together. Pour into prepared pan. Bake at 350
degrees F for 30-35 minutes. Cool. Lift brownies from pan by foil edges and frost.
To make the icing, beat butter, vanilla, sugar and egg in a small bowl until smooth. Add warm
chocolate and beat until smooth. Spread on brownies and refrigerate until ready to serve. Peel
away foil and slice.
