Migas

Whip a couple eggs in a bowl like you normally would for scrambling
Start them frying slowly
Add salt n pepper
Flip the eggs around a little
Cut up a whole roma tomato and dump it in
Dump in a bunch of cheese
Break up some corn chips into it and fold over a few times
Put on some Tapatia hot sauce to taste

Optional:

Salsa
Green chilies
Green onions
