Crispy Homemade French Fries

Crispy homemade French fries the restaurant way: soaked, double-fried potatoes that come out golden outside and fluffy inside. Better than any frozen bag.

Prep time: 45 min
Cook time: 30 min
Total time: 1 hr 15 min
Servings: 4 servings

Ingredients:
- 4 Russet potatoes (about 2 lb)
- 2 tbsp neutral oil
- 1 tsp kosher salt (plus more to taste)
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1/4 tsp garlic powder (optional)

Instructions:
1. Preheat the oven to 425F (220C), or the air fryer to 400F (200C).
2. Scrub the potatoes and cut them into even sticks about 1/4 inch thick.
3. Rinse the potatoes, then soak them in cold water for 20 to 30 minutes. Drain and pat completely dry.
4. Toss the potatoes with oil, salt, pepper, paprika, and garlic powder if using.
5. For oven fries, spread them in one layer and bake for 25 to 35 minutes, turning once. For air fryer fries, cook in batches for 15 to 20 minutes, shaking halfway.
6. Taste and add more salt while hot. Serve immediately for the best texture.
