Beef Enchiladas

1 pound ground beef
1 can spicy enchilada sauce (28 oz can... I use Picante Las Palmas brand)
1 can diced green peppers (get the medium size can or 2 4oz cans)
1 onion, chopped
1 lb. cheddar cheese, shredded
6-8 flour tortillas, soft taco size
1/2 tsp. salt
1/2 tsp. pepper
1/4 tsp. chipotle chili powder (optional)

Preheat oven to 350 degrees.

Brown the ground beef along with the onion. Add salt, pepper, chili powder and stir in a couple tablespoons of the enchilada sauce.

Fill a plate with some enchilada sauce. Place a tortilla on the plate and let the sauce soak in a bit... just a few seconds. (This helps prevent the tortillas from cracking when you roll them up.) Flip the tortilla so that both sides are soaked. Place in a 9x13 pan and fill with ground beef/onion mixture, some cheese, some diced green peppers, and then pour in a little bit of enchilada sauce. Roll over leaving about an inch sticking out along the bottom. The next tortilla will go on top of the lip and so forth until the pan is full. Pour the remaining enchilada sauce over the top and then add the rest of the cheese. Bake for 35-40 minutes.

You could also use chicken or turkey. My personal favorite is turkey, but it takes a while to cook the bird.
